American Wagyu beef is a premium beef produced from cattle that carry Japanese Wagyu genetics crossed with American breeds like Angus. The result is beef with intense intramuscular marbling — the white fat streaks throughout the meat — that makes it exceptionally tender, juicy, and flavorful. At Prime Cuts Texas, our American Wagyu is raised at Allen Ranch in Luling, TX and shipped direct to customers nationwide.
Where American Wagyu Comes From
The Wagyu breed originated in Japan, where "wa" means Japanese and "gyu" means cow. Japanese Wagyu cattle were selectively bred for centuries to produce extraordinary marbling. In the 1970s–90s, a small number of full-blood Wagyu cattle were exported to the United States before Japan banned further exports.
American ranchers crossed these Wagyu genetics with domestic breeds — primarily Angus — to create American Wagyu. The crossbreeding produces cattle that thrive in American ranch conditions while retaining the marbling characteristics that make Wagyu beef world-renowned.
What Makes It Different
The defining characteristic of American Wagyu is its marbling — the intramuscular fat that runs throughout the meat in fine white streaks. This marbling melts during cooking, basting the meat from within and producing:
- •Exceptional tenderness — the fat breaks down muscle fibers during cooking
- •Rich, buttery flavor that conventional beef cannot match
- •A juicier eating experience — the internal fat keeps the meat moist
- •A higher smoke point that allows for better searing
On the Beef Marbling Standard (BMS) scale, conventional USDA Choice beef scores around BMS 4–5. American Wagyu typically scores BMS 6–9. Japanese A5 Wagyu scores BMS 8–12. American Wagyu sits in a sweet spot — significantly better marbling than conventional beef at a fraction of the Japanese A5 price.
